Cacio di Bosco Tartufo from cheesemaker il Forteto: this cheese is made from the milk of ewes, with Bianchetto and Chianchetto truffle pieces incorporated in it.   It is a young and fresh cheese, milky with a nutty taste with some garlic added it. Nice, especially as there is quite a bit of the noble fungus in it.  3.5/5
